Blueberry Yogurt French Toast

Thick sliced organic Italian bread prepared with a yogurt and egg mixture, topped with more yogurt and fresh blueberries.

Ingredients

  • 2 eggs
  • 1/2 cup Silk Light Vanilla Soy Milk
  • 2 8 ounce containers Noosa Blueberry Yoghurt
  • 1 loaf Simple Truth Country Italian Style Bread
  • 1 pint fresh blueberries

Instructions

  • Prepare bread in oven according to package instructions. Cut into 1" slices.
  • Whisk eggs together. Add one container of Noosa yoghurt and Silk soy milk, whisk to combine.
  • Heat griddle or skillet to medium high heat and spray with non-stick cooking spray, dip bread in milk mixture, coating both sides. Place on griddle and cook for about 2 minutes each side, or until golden brown.
  • Serve with additional Noosa Yoghurt and fresh blueberries.
