Cabbage Roll Soup Recipe (Crockpot or Stove Top)

Lean ground beef, rice, cabbage and tomatoes. simmered together to make this simple, yet hearty Cabbage Roll Soup. All of the flavors of stuffed cabbage rolls, in a bowl.

Ingredients

  • 2 pounds lean ground beef
  • 1 head green cabbage chopped
  • 3/4 cup chopped onion
  • Salt and Pepper to taste
  • 2 cloves garlic minced
  • 2 14.5 ounce cans of diced tomatoes + 3 cans water
  • 3 beef bouillon cubes
  • 3 Tablespoons Tomato Paste
  • 1 1/2 cups tomato juice
  • 1/2 Tablespoon Worcestershire sauce
  • 3/4 cup instant brown rice uncooked

Instructions

  • In your soup pot, brown ground beef with onion and garlic. Drain any excess fat.
  • Add cabbage and combine to wilt for about 5 minutes.
  • Add the remainder of the ingredients into the pot. Cover and bring to a boil. Reduce heat and simmer for about 30 minutes.
  • Serve hot.

Notes

** To prepare in the crock pot, add browned ground beef and remaining ingredients to your slow cooker, and cook on low for about 5 hours.
Store leftover soup in an airtight container in the fridge for 3-4 days. In the freezer, the cabbage soup will keep for up to 3 months.
