Ripe tomatoes, mayonnaise, saltine crackers and fresh cracked black pepper. Tomato cracker salad is reminiscent of a good, old fashioned tomato sandwich!
Dice tomatoes and place in a bowl. Stir in mayo. Add black pepper. Mix in. Refrigerate until ready to serve
Right before serving, stir in broken saltine crackers.
Notes
Fresh, in-season tomatoes will always give you the best flavor.
Use real mayonnaise rather than salad dressing for the classic taste and texture.
Break the saltine crackers into large pieces instead of crushing them into crumbs.
Freshly cracked black pepper adds much more flavor than pre-ground pepper.
This recipe can easily be doubled for potlucks, picnics, and summer cookouts.
Storage:Tomato Cracker Salad is one of those recipes that's truly best enjoyed fresh. If you'd like to prepare it ahead, mix the tomatoes, mayonnaise, and black pepper, then cover and refrigerate for up to a few hours. Keep the crackers separate and stir them in just before serving.Once the crackers have been added, the salad doesn't store well because they'll continue absorbing the tomato juices and become soft.
