Ingredients
For the Homemade Thousand Island Dressing:
1/2clovegarlic minced
1/4teaspoonkosher salt
3/4cupmayonnaise
1/4cupchili sauce
2Tablespoonsketchup
1 1/2Tablespoonsdried minced onion
2teaspoonssweet pickle relish
1/2hard boiled egg finely chopped
fresh cracked black pepper, to taste
For the Salad:
116-ounce box of pasta noodlescooked al dente
1cupFrank's Krautdrained
6ouncesSwiss cheesecubed or shredded
1 1/2cupcorned beefcubed
Instructions
Prepare the Homemade Thousand Island Dressing:
Make the Homemade Thousand Island Dressing by mixing all of the ingredients in a bowl. Cover and refrigerate until ready to use. I like to make it in the morning, so the flavors have time to mingle.
Make the Pasta Salad:
Cook pasta in salted boiling water until al dente. Don’t overcook your pasta or the salad will be mushy. Rinse in cold water and place in the salad bowl.
Top with cubed corned beef, Frank’s Kraut and Swiss cheese. Add in your dressing, stirring to combine. Add in about half, then continue adding in until you achieve the amount you want.
Sprinkle with caraway seeds and fresh parsley if desired. Mix in. Serve immediately, or refrigerate until ready to eat.
Notes
Depending on how much dressing you prefer, you may have a bit leftover. Just store it in the fridge in an air-tight container for up 3 days. It's great on a lettuce salad or use it for dipping.Store leftover salad in the fridge for up to 3 days. I do not recommend freezing this salad.
