Reuben Pasta Salad

Creamy Reuben Pasta Salad made with corned beef, Swiss cheese, noodles, Frank's Kraut and the best homemade Thousand Island dressing. Hearty on it's own, or makes a wpnderful side dish for any meal!

Ingredients

For the Homemade Thousand Island Dressing:

  • 1/2 clove garlic minced
  • 1/4 teaspoon kosher salt
  • 3/4 cup mayonnaise
  • 1/4 cup chili sauce
  • 2 Tablespoons ketchup
  • 1 1/2 Tablespoons dried minced onion
  • 2 teaspoons sweet pickle relish
  • 1/2 hard boiled egg finely chopped
  • fresh cracked black pepper, to taste

For the Salad:

  • 1 16-ounce box of pasta noodles cooked al dente
  • 1 cup Frank's Kraut drained
  • 6 ounces Swiss cheese cubed or shredded
  • 1 1/2 cup corned beef cubed

Instructions

Prepare the Homemade Thousand Island Dressing:

  • Make the Homemade Thousand Island Dressing by mixing all of the ingredients in a bowl. Cover and refrigerate until ready to use. I like to make it in the morning, so the flavors have time to mingle.

Make the Pasta Salad:

  • Cook pasta in salted boiling water until al dente. Don’t overcook your pasta or the salad will be mushy. Rinse in cold water and place in the salad bowl.
  • Top with cubed corned beef, Frank’s Kraut and Swiss cheese. Add in your dressing, stirring to combine. Add in about half, then continue adding in until you achieve the amount you want.
  • Sprinkle with caraway seeds and fresh parsley if desired. Mix in. Serve immediately, or refrigerate until ready to eat.

Notes

Depending on how much dressing you prefer, you may have a bit leftover. Just store it in the fridge in an air-tight container for up 3 days. It's great on a lettuce salad or use it for dipping.
Store leftover salad in the fridge for up to 3 days. I do not recommend freezing this salad.
