Cucumber Tomato Salad

This easy Cucumber Tomato Salad features sliced cucumbers, tomatoes, dill, red onions, and feta and is the perfect way to take advantage of fresh, in-season produce. Perfect for a quick and easy side dish or light lunch, this salad is super refreshing.

Ingredients

For the Salad:

  • 1 pound tomatoes sliced
  • 1/2 large English cucumber sliced
  • 2 small red onions thinly sliced
  • 2 Tablespoon fresh dill
  • 2 rounds feta cheese cubed

For the dressing:

  • 2 Tablespoons red wine vinegar
  • 4 Tablespoons olive oil
  • 2 teaspoons dijon mustard
  • Salt and pepper to taste

Instructions

  • Add all the ingredients for the dressing to a jar or small bowl. Whisk to combine.
  • Add the tomatoes, cucumber, and red onions to a large bowl and toss.
  • Add the dill and feta and lightly toss before drizzling the dressing on top. Mix to combine.
  • Serve with extra dill.

Notes

To keep cucumbers crisp in the salad, soak them in salted water in the fridge for at least 2 hours before preparing the salad.
