Cilantro Lime Rice

This Cilantro Lime Rice has just three ingredients and is a perfect accompaniment to any dish, but especially love it with Mexican and Seafood dishes!

Ingredients

  • 4 cups prepared long grain rice
  • zest of one lime
  • juice of 1/2 of lime
  • 1/2 cup chopped cilantro or more or less to taste

Instructions

  • Squeeze lime juice and sprinkle lime zest over prepared rice. Stir in cilantro. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, warm gently in the microwave or on the stovetop with a splash of water to bring back the moisture.
You can also make the rice ahead of time and stir in the lime and cilantro just before serving for the freshest flavor.
