Brown Sugar Cinnamon Pop Tart Bars

Soft, buttery bars layered with gooey brown sugar cinnamon filling and topped with a sweet cinnamon glaze. These Pop Tart Bars taste just like the classic breakfast treat, only homemade and better.

Ingredients

Bar Ingredients:

  • 1 cup salted butter softened
  • 1 cup light brown sugar firmly packed
  • 1 cup white granulated sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 Tablespoon ground cinnamon
  • 2 ½ cups all-purpose flour

Filling Ingredients:

  • 1 cup brown sugar
  • 1 Tablespoon ground cinnamon

Icing Ingredients:

  • 1 cup powdered sugar
  • ¼ cup whole milk
  • 1 Tablespoon light brown sugar
  • ½ Tablespoon ground cinnamon

Instructions

  • Preheat your oven to 350°F.
  • Start by making your cookie dough. Combine the softened butter, brown sugar, and granulated sugar. Use an electric hand mixer to whisk until the sugar is dissolved.
  • Whisk in the eggs until they are well incorporated with the butter mixture. Add the baking soda, baking powder, cinnamon, and flour. Whisk again until no dry pockets remain in your cookie dough.
  • Press about ½ of the cookie dough into a 9x13 inch baking pan. Whisk your filling together and then sprinkle it over the cookie dough. Top the filling with the remaining cookie dough and bake your bars for 20-25 minutes, or until golden brown.
  • While the bars are baking, whisk together the powdered sugar, milk, brown sugar, and cinnamon to create your icing.
  • Let the bars cool for at least 30 minutes after coming out of the oven. Pour the icing over the bars. Slice, serve, and enjoy!

Notes

Store in an airtight container at room temperature for up to 5 days. Refrigeration is possible, but it may dry them out slightly faster.
Serve at room temperature, chilled, or reheated in the microwave for about 10 seconds.
