Kiwi Mojito

Ingredients

  • 2 kiwifruit
  • 1 lime
  • 2 teaspoons honey or agave nectar
  • 4 ounces white Rum
  • Handful of fresh mint leaves
  • Soda water
  • Ice

Instructions

  • Peel the kiwifruit and chop it into small chunks, divide the pieces between two glasses.
  • Add the juice of half a lime to each glass along with 10-12 fresh mint leaves and honey. 
  • Use the back of a wooden spoon or cocktail muddler to muddle the mixture.
  • Fill each glass with ice then add the rum and top off with soda water.
  • Garnish with slices of kiwifruit, limes, and fresh mint.
