Fiesta Corn Dip

Cream cheese mingles with Mexicorn and Rotel tomatoes in this delicious 5 ingredient dip recipe. A quick Mexican dip recipe perfect for dipping tortilla chips.

Ingredients

  • 2 8 ounce packages of cream cheese, softened
  • 1 10 ounce can Rotel tomatoes, do not drain
  • 1 3.8 ounce can sliced black olives, drained
  • 1 7 ounce can Mexicorn, drained
  • 1 packet Hidden Valley Fiesta Ranch Dip Mix

Instructions

  • In a mixing bowl, whip cream cheese with Fiesta Ranch Dip Mix until smooth.
  • Stir in Mexicorn and Rotel.
  • Fold in sliced olives.
  • Serve with corn tortilla chips for dipping.  

Notes

I use the Original Rotel Tomatoes with Green Chilies. You can use the mild or the hot Rotel if you want to adjust the heat.
Store leftovers in the fridge and consume it within 5 days. I do not recommend freezing this dip.
