  • FOR THE BREAD:
  • 1 cup fresh strawberries chopped
  • 2 Tablespoons all purpose flour
  • 1/2 cup butter room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 salt
  • 1/2 cup milk
  • 1 3/4 cups flour
  • FOR THE STRAWBERRY GLAZE:
  • 3/4 cup powdered sugar
  • 1/4 teaspoon vanilla
  • 1 1/2 teaspoon milk
  • 1/4 cup fresh strawberries finely chopped

Instructions

  • Preheat the oven to 350 degrees F. Grease or spray a 9x5" loaf pan. Set aside.
  • In a small bowl, coat strawberries with 2 Tablespoons of flour. Set aside.
  • In the bowl of a stand mixer, cream butter and sugar together for about 2 minutes, until light and fluffy. Scrape the sides of the bowl, add in the eggs and vanilla and mix until evenly combined.
  • Combine flour with baking powder and salt. Add to the butter mixture a little at a time, alternating with the milk. mix until smooth.
  • Fold in the flour-coated strawberries with a rubber spatula and pour the bread batter into the prepared loaf pan.
  • Bake for 45-50 minutes, until a toothpick in the center of the bread, comes out clean.
  • Remove from the oven and cool in the loaf pan for 10 minutes before removing and transferring to a wire rack to cool.
  • Beat the powdered sugar, vanilla, milk, and strawberries together until the glaze is formed. Pour over bread. Save a little to serve with the bread if you like.
  • Store in an airtight container for 2 days.
