Ingredients

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh cilantro chopped
  • 1 Tablespoon scallions chopped
  • 1/2 Tablespoon fresh dill minced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 chipotle Chili Peppers in Adobo Sauce + 1/2 teaspoon of the sauce
  • sprinkle of salt & pepper to taste
  • 2 Tablespoons to 1/4 cup of milk

Instructions

  • Combine the mayo, sour cream, chipotle peppers and sauce, fresh herbs, and spices in a food processor or blender until smooth.
  • Give it a taste and sprinkle with salt and pepper to your liking.
  • At this stage, the dressing will be thick and will thicken even more when you refrigerate it. So, if you plan to eat it immediately, add about 2 Tablespoons of milk to the dressing to thin it out. Planning to enjoy it as a dip? Simply omit the milk. If you refrigerate the dressing before serving, you may need to add in a couple more Tablespoons of milk before pouring over your salad.

Notes

You won't use the whole can of chili peppers, toss them in the freezer in an airtight container to add to other recipes like chili or enchiladas.
Parsley makes a good substitute for those who don't care for cilantro.
The juice of a half lime is also a nice addition to this dressing.
