Apple Pie Oatmeal Cookies

I took my favorite cookie, my Mom’s Oatmeal Raisin Cookies and transformed them into these Apple Pie Oatmeal Cookies.  They have chunks of apple, golden raisins, and spiced with apple pie spice.

Ingredients

  • 1/2 cup shortening I use the butter flavored Crisco
  • 1/2 cup butter softened (1 stick)
  • 1 cup light brown sugar
  • 1 cup granulated
  • 2 eggs
  • 2 teaspoons vanilla bean paste or 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons apple pie spice
  • 3 cups rolled oats
  • 1/2 cup golden raisins
  • 1 cup dried apples diced

Instructions

  • Preheat oven to 350 degrees.
  • With your mixer, cream together butter and shortening. Add in sugars, vanilla and eggs, beat until fluffy.
  • Sift together flour, baking soda and apple pie spice. Gradually add it to the mixer until it's incorporated.
  • Fold in oats, raisins and dried apples.
  • Scoop rounded dough balls with a small cookie scoop, and place on an ungreased cookie sheet.
  • Bake for about 9 minutes, or until edges are lightly golden brown. Don't over bake them, or they won't be chewy.
  • Let rest on cookie sheet for a minute or so, before transferring them to a cooling rack.
