Pea Salad with Cauliflower

A unique twist on pea salad, made with celery, onion, and crisp cauliflower with a slightly sweet and creamy dill dressing.

Ingredients

  • 3 cups frozen peas
  • 1 cup 4 stalks celery, chopped
  • 1/4 cup onion chopped
  • 1 cup cauliflower
  • 1/3 cup mayo
  • 1 teaspoon mustard
  • 1/2 Tablespoon sugar
  • 1/4 teaspoon dill

Instructions

  • Bring a pot of water to boil.
  • Combine mayo, mustard, sugar and dill. Set aside.
  • Drop frozen peas, onion and celery into the boiling water for no longer than 2 minutes. Drain and rinse with cold water.
  • Combine the mixture with cauliflower and dressing.
  • Chill until ready to serve.
