Ingredients
45 ounce salmon filets
1poundnew potatoeshalved
12ouncesfresh green beans
2TablespoonsOlive Oil
Salt & PepperI used about 1/2 teaspoon of each
2Tablespoonsof lemon juice
2teaspoonsDijon mustard
1Tablespoondried parsley flakes
1/2Tablespoondill
Instructions
Preheat oven to 425 degrees and cover a sheet pan with a silicone baking mat or parchment paper.
Place potatoes in a plastic bag or a bowl and drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat completely.
Transfer to the baking sheet and place in the oven for 15 minutes.
In a small bowl combine, lemon juice, Dijon, parsley and dill.
Remove baking sheet after 15 minutes. Add green beans to the sheet, combine them with the potatoes. Push them to the outer edges of the sheet pan and place the salmon filets (skin side down if there is skin) in the center. Brush the salmon with the lemon mixture.
Return sheet pan to oven for another 12-15 minutes. Salmon will be opaque all the way through, and fill flake with a fork when cooked completely.
