Ingredients
2 3/4quick oats
1medium applecored and diced, skin left on
1cupslivered almonds
1cuppepitaspumpkin seeds
1/2diced dried tart cherries
1Tablespooncinnamon
1/2teaspoonsalt
1/2cupbrown sugar
1/3cupolive oil
1/3cuphoney
1teaspoonvanilla
Instructions
Preheat oven to 300 degrees and line a large cookie sheet with parchment.
In a large bowl, mix together apples, cherries, oats, almonds, pepitas, cinnamon and salt.
In a saucepan over medium heat, warm the sugar, honey, vanilla and olive oil until sugar is just dissolved. Pour over oat mixture. Stir to coat. Spread onto prepared cookie sheet.
Bake for 40 minutes, stirring occasionally, or until dry and lightly golden.
Allow to cool to room temperature before storing in an air tight container.
