Ingredients
1-2tablespoonvegetable oilor bacon grease
1medium onionchopped
1teaspooncumin seed
1teaspoonchili powder
1/2teaspooncayenne pepperor more to taste
315.5 ounce cans of pinto beans, drained and rinsed
2cupsbeef stockcan also sub chicken or vegetable stock
1bunch cilantro leaveschopped (optional)
salt to taste
Instructions
Heat oil in a dutch oven over medium-high heat. Saute onion until translucent.
Add cumin seed and chili powder; stir spices in with onions.
Add in pinto beans and beef stock, bring to a boil, and then reduce heat to medium and simmer for about 5 minutes.
Remove from heat and mash to desired consistency. Stir in cayenne pepper and salt to taste.
