Ingredients
1poundalmonds
1/3cupsugar
1/2Tablespoonkosher salt
1/8teaspoonwhite pepper
1teaspoonchili powder
1/4teaspooncayenne pepper
1teaspoonSpanish style smoked paprika
1/2Tablespoongarlic powder
1/2teaspoonground cumin seed
1egg white
1Tablespoonwater
3dashes Tobasco sauce
1/2teaspoonWorcestershire sauce
Instructions
Preheat oven to 300 degrees. Line a cookie sheet with a Silpat mat or parchment paper.
Combine dry ingredients (minus almonds) in a bowl. Set aside.
In a separate bowl, whisk together water and egg white. Add in Worcestershire sauce and tobasco, stir to combine. Add in dry mixture and stir to incorporate.
Add in almonds. Stir to make sure they are evenly coated.
Spread onto prepared cookie sheet in an even layer.
Bake for 20 minutes. Turn almonds over. Reduce heat to 275 degrees and bake for 45 minutes more.
Cool completely and transfer to an airtight container.
