1/2cupunsalted buttersoftened
3/4cuplight brown sugar
1teaspoonvanilla
1egg
13.4 ounce box Instant Vanilla Pudding
1/2teaspoonbaking soda
1/4teaspoonsalt
1 1/4cupsflour
1/4cupsprinklesI used red jimmies and blue sugar crystals
3/4cupPatriotic Milk Chocolate M&M'sor any color for another occasion
Instructions
Cream butter and brown sugar with your mixer, until fluffy. Add in egg and vanilla, mix to incorporate. Add in the box of instant vanilla pudding, baking soda and salt. Mix in flour until combined. Fold in M&M's and sprinkles.
Scoop 1 Tablespoon of dough and roll into a ball. Place on a cookie sheet lined with parchment. No need to separate them, you will chill all of them before baking. Cover with plastic wrap and place in the fridge for about an hour.
Preheat oven to 350 degrees. Place chilled cookies 2" apart on a cookie sheet lined with parchment paper. Bake for 9-11 minutes, or until edges begin to barely brown. Cool 5 minutes on cookie sheet. Transfer to rack to cool completely. Store in airtight container.
