Ingredients
1poundpork sausage
1/2teaspoonred pepper flakesoptional
1can10.75 ounce cream of mushroom soup
14 ounce can mushrooms
3/4cupmilk
1/2cuponionchopped
1/2teaspoonsalt
1/4teaspoonpepper
3cupspotatoessliced
1Tablespoonbuttercut into small pieces
1 1/2cups6 ounces shredded cheddar cheese
2-3Tablespoonschives
Instructions
Spray a 1 1/2 quart casserole dish with non-stick cooking spray, preheat oven to 350 degrees.
Brown sausage with 1/2 cup onion and red pepper flakes until cooked and crumbled. Drain excess fat.
Stir together soup, milk, mushrooms, salt and pepper in a bowl.
Place half of potatoes in the bottom of the casserole. Top with half of soup mixture, top with half of sausage, Repeat layers ending with sausage, dot with butter.
Cover with foil and bake for 11/4 - 1 1/2 hours, or until potatoes are tender. Remove foil, sprinkle with cheese and chives, bake until cheese is bubbly.
