Strawberry Pancakes

Strawberry pancakes stand as one of the best ways to start the day off with a smile. But these are extra special. Because I use some strawberry Jello, you get a colorful pancake with just a touch more sweetness. These are easy to make and work wonderfully for brunch and entertaining. They stand out on any table.

Ingredients

  • 4 cups fresh strawberries sliced
  • 1 3 ounce package of Strawberry Jell-O, divided
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 2 cups milk
  • ¼ cup vegetable oil
  • Maple syrup whipped cream and additional strawberries for serving

Instructions

  • Toss strawberries with 1 Tablespoon of Strawberry Jell-O
    mix. Set aside.
  • In a bowl whisk together flour, remaining Jell-O, baking
    powder and salt. Set aside.
  • In a mixing bowl beat together eggs, milk and oil until blended.
  • Add dry mixture into wet mixture and mix to combine.
  • Prepare a griddle or skillet with non-stick cooking spray or
    oil, ladle batter into the skillet to form pancakes. (about ¼ cup for each
    pancake)
  • Cook until bubbles begin to form on the top of the pancake,
    and then flip to continue lightly browning on the opposite side.
  • Serve topped with syrup, strawberries and whipped cream.
