Almond Joy Brownie Bites

Almond Joy Brownie Bites take all the great flavors of the classic Almond Joy candy bar and pack it into a delicious fudgy mini brownie. It's like a perfect little coconut filled brownie ball!

Ingredients

  • 1 – 9×13 size brownie mix
  • 4 cups sweetened flaked coconut
  • 1 -14 ounce can sweetened condensed milk
  • 1 package of chocolate almond bark or chocolate candy quick
  • 4 dozen almonds

Instructions

  • Prepare mini muffin cups with non-stick cooking spray.
  • Prepare brownie mix according to the package instructions, and fill muffin cups about 1/2 full.
  • Bake according to package directions. Mine took about 15 minutes.
  • Remove brownies from tins, stick an almond in the top of each brownie.
  • While they are cooling, combine sweetened condensed milk and coconut in a bowl.
  • Press a ball of coconut on top of each brownie, and put in the freezer for about 30 minutes.
  • Melt chocolate candy according to package instructions.
  • Dip the tops of the brownies in chocolate and place on a cookie sheet lined with waxed paper, place in the refrigerator to set.

Notes

While you are dipping them, work quickly. Once they begin to come to room temperature you may run into the problem of the coconut ball falling into your chocolate. Hint: do about one dozen at a time, keeping the others in the freezer until you dip them.
