Sweet Balsamic Glazed Pork Tenderloin

This glazed pork tenderloin has the flavors of soy sauce, honey, brown sugar and balsamic - it's Sunday supper worthy, but bakes up in about an hour, so it's able to make weeknight meals special!

Ingredients

  • 3 pound boneless Pork Tenderloin Roast + 1/4 cup water
  • For the Rub:
  • 1 teaspoon sage
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Glaze:
  • 1/4 cup balsamic vinegar
  • 1/2 cup brown sugar
  • 3 Tablespoons soy sauce
  • 2-3 Tablespoons honey
  • 1/2 cup water
  • 2 heaping Tablespoons corn starch

Instructions

  • Preheat oven to 325 degrees, spray a roaster with non-stick cooking spray.
  • Rinse pork tenderloin in cold water. Mix ingredients for rub together, and rub all over the pork tenderloin. Place in roaster with 1/4 cup water in the bottom of the pan. Bake uncovered for 45 minutes to one hour (pork tenderloin will bake for 15-20 minutes per pound at 325 degrees to be cooked completely)
  • When roast is cooked to 160 degrees heat ingredients for glaze in a saucepan until thickened. Brush over roast, and change oven to "broil" on high, broil the glaze over the roast for about 5 minutes to caramelize it.
  • Remove and slice.

Notes

This could be made in the crock pot, Place about 1/2 cup water in the crock pot, place rubbed pork loin in crock pot and cover. Cook on low 8 hours. Two options for glaze: one hour before you are ready to serve, add glaze to roast in crock pot. OR remove loin from crock pot, place on a baking sheet and brush roast with glaze, pop under the broiler for 5 minutes.
