I am always on the lookout for a good recipe for easy to make bars to either throw in the lunch boxes, serve for after school snacks or sleepovers, or even to take to church for food committee.

I recently stocked up big time at Walmart on all of the items we eat from General Mills.  This time of year is a great time to cash in big on the Box Tops for Education! We save them year round, but right now, select items have bonus box tops, 5 per box!  Everyone I know saves box tops for their kids or grand kids schools.  It’s so easy to clip them, turn them in and make some fantastic cash for things our schools would otherwise go without.  Each Box Top is worth $0.10 for your child’s school!  Box Tops is one of America’s largest school earnings loyalty programs, over 80,000 K-8 schools participate.  My kid’s school  primarily uses the money they receive from Box Tops for Education™ for P.E. equipment and items for our computer lab.

So I had lots of cereal to play with. and decided to experiment this weekend with the Multi Grain Cheerios.

I’d say my experiment turned out pretty successful, don’t you?  I would best describe this as a chocolate covered Payday bar.  So full of peanut butter flavor, chewy and then, I mean, what goes better with peanut butter than chocolate, am I right?

I brought some over to our neighbors that are moving, bagged some up for my son at college, and the rest will get snacked on here throughout the week.  I cut them large for the photo, but you can cut them smaller like fudge, and they are a perfect “pop-in-your-mouth” treat.  These are going on my holidays trays this year for sure!

Chewy Chocolate Peanut Butter Bars

Chewy peanut butter bars made with Multi Grain Cheerios, topped with a chocolate peanut butter ganache.

Ingredients

For the Bars:

  • 1 cup brown sugar
  • 1 cup light corn syrup
  • 3/4 cup creamy peanut butter
  • 7 cups Multi Grain Cheerios

For the Ganache:

  • 1 1/2 cups semi sweet chocolate chips
  • 1/2 cup cream
  • 1/2 cup creamy peanut butter

Instructions

  • Generously butter a 9x13 baking dish. Set aside.
  • In a large pan over medium heat melt together brown sugar and corn syrup until sugar is dissolved. Stir in peanut butter.
  • Remove from heat and stir in Cheerios.
  • Press into 9x13 dish.
  • Cool.
  • Prepare ganache by melting chocolate chips and cream on the stove over medium low heat. Whisk together until smooth and shiny. Remove from heat. Whisk in peanut butter.
  • Pour over bars, let stand to set.
  • Cut and enjoy!

Notes

Hint: When pressing cereal into baking dish, it's really sticky! Lay a sheet of waxed paper over the top and press with your hands! Easy!
