Ah… summertime and the livin’ is easy.  School is out, the sun is out, the the grill is fired up and we are all grinning from ear to ear!

We spend many hours in our backyard each summer… it’s what we live for all winter long.  Nothing beats a hot summer’s day, relaxing by the pool with family and friends, and the smell of the grill.

I love to play hostess at home.  Whether it’s a large group or just the six of us, I am happiest when I have a gathering around my table.

Planning a gathering doesn’t have to be hard work.  Really all it takes is some yummy food, right?

We love hot dogs in our family, so when it comes to grilling, we really enjoy the simplicity of them, adding our favorite toppings and a nice salad on the side.

Everyone in my family likes their hot dogs a little different, so when I make them, I like to pull out a bunch of condiments.  Ketchup, Mustard, Onion, Sweet Relish and sauerkraut!  In my opinion, purchasing the buns from the grocery bakery makes them taste all the better, too,   This time, we bought sweet Hawaiian buns.  Mmmm Mmm!

My husband got a new grill for Father’s Day last year, he loves to use it any chance he gets!

Mom's Macaroni Salad

Mom's Old Fashioned Macaroni salad with hard boiled eggs, celery and a creamy dressing with mayo and mustard. Easy to make and delicious!

Ingredients

  • 12 ounce box Macaroni
  • 5-6 hard boiled eggs
  • 1 cup chopped celery
  • 1/4 green onion sliced
  • Salt & Pepper to taste
  • 1/8 cup yellow mustard
  • 3/4 cup mayonnaise
  • fresh chives for garnish optional

Instructions

  • Cook pasta according to package instructions. Rinse in cold water.
  • Peel and chop hard boiled eggs.
  • In a large bowl, combine noodles, celery and green onion. Stir in mayo and mustard.
  • Salt and pepper to taste.
  • Top with fresh chives.
  • Store in refrigerator until ready to eat.

Notes

This salad tastes even better the next day, so if time permits, let it refrigerate over night.
