These Spiced Glazed Muffins are one of my favorite muffin recipes to make, especially in the fall!  Something about the scents of cinnamon and nutmeg makes me think of fall and the holidays.  
Not that these muffins should have to wait for fall or the holidays — I make them year round, it’s just the scents that make me reminisce the flavors of fall.

Glazed Donut Muffins

I found the recipe on Pinterest, and was intrigued by their name, “Glazed Doughnut Muffins.”  They were compared to a Krispy Kream donut.
 
The first time I made them, I really didn’t think they tasted like a Krispy Kream Donut.  At least not from my memory of them. 
But whether or not they tasted like those iconic “Hot ‘n Now” glazed donuts, they were marvelous!
 
If you love muffins, and you love glazed donuts – this muffin recipe is most definitely for you.

Spiced Cake Muffins

I love spice cake, it’s my second favorite, next to chocolate. I think that’s one of the reasons this is one of my favorite muffin recipes.  Well, besides that glaze!
 
Moist cakey muffins, full of vanilla, cinnamon and nutmeg.  They are best eaten warm, and it’s recommended that you eat them in a matter of a couple of days, but that isn’t typically a problem. 
 
They need to be stored in the fridge, they also freeze well.  So if they are cold, you can just pop it in the microwave and get that warm gooey muffin all over again. 

 

 

How to Make Spiced Glazed Muffins

This muffin recipe uses basic pantry ingredients: flour, sugar, brown sugar, baking soda and powder, salt, nutmeg, cinnamon, eggs, vegetable oil, vanilla butter and milk.  Nothing fancy here. 

Step By Step Guide:

  1. In a mixing bowl, cream together butter, sugar and oil.
  2. Add eggs and beat to combine.
  3. Stir in baking powder, soda and spices and vanilla.
  4. Stir in the flour and milk, alternating until combined.
  5. Spoon batter into muffin cups, about 2/3 full.
  6. Bake.
  7. Make the glaze by whisking all of the ingredients together. 
  8. When muffins have cooled slightly, dip the muffin tops in the glaze, allow the glaze to harden. Then dip them once more. 
  9. Let them set up slightly before serving warm.

Spiced Glazed Muffins

Ingredients

  • 1/4 cup butter softened
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 2/3 cups flour
  • 1 cup milk
  • Glaze:
  • 4 Tablespoons butter melted
  • 1 1/2 -2 cups powdered sugar
  • 3/4 teaspoon vanilla

Instructions

  • Preheat oven to 425 degrees. Line or grease muffin cups.
  • In a mixing bowl, cream together butter, sugar and oil.
  • Add eggs and beat to combine.
  • Stir in baking powder, soda and spices and vanilla.
  • Stir in the flour and milk, alternating until combined.
  • Spoon batter into muffin cups, about 2/3 full.
  • Bake the muffins for 15-17 minutes or until they are pale golden brown, and a toothpick inserted in middle comes out clean.
  • Make the glaze by whisking all of the ingredients together. 
  • When muffins have cooled slightly, dip the muffin tops in the glaze, allow the glaze to harden. Then dip them once more. Heat the glaze in the microwave for 10-15 seconds before dipping the second time.
  • Serve warm. Store in the refrigerator for up to 2 days.
