Homemade Chicken Noodle Soup, from scratch, just like Mom used to make.  Rich flavorful chicken stock, chock-full of sliced carrots, celery, and chopped onion, engulf tender pieces of chicken and homemade egg noodles.  Comfort food at it’s finest!
 

Homemade Chicken Noodle Soup made by Mom from scratch. This was hands down my most favorite meal as a kid, and to this day is my number one ranked form of comfort food.

Now it’s my kids’ most requested meal at our house. Even in the heat of summer, they request it. My oldest daughter will eat it for breakfast if she knows it’s available.
 
But today with the fresh blanket of snow, it seemed even more fitting.
 
I remember my Mom making this when I was little and every time I ate it I got the hiccups. I realize now it was probably because I was eating it WAY too fast!!
 
When my friend, Lisa and I used to play in my play kitchen we would put warm water in my “soup kettle” and “cook” homemade chicken noodle soup on my stove. It was the one meal we always made.

 

A Longing For Chicken Noodle Soup

I have known how to make this as long as I can remember. It’s really not hard…
But I guess if you didn’t grow up eating it, you wouldn’t know how?
 
I have passed this “recipe” on to many friends and family over the years.  My kids all know how to make it.
I cannot say I ever really had a “recipe” though. So today, I am going to measure and count and do my best to walk you through it.

Homemade Chicken Noodle Soup
One thing I have always noticed over the years, sometimes the broth is better than others.  When it’s good, we refer to it as “a good batch!” 
And when it needs some help, just like my Mom did, and her Mom before her did, I always blame the chicken!  It’s easy to fix though, by adding a little chicken bouillon. 
 
The noodles will soak up the broth as it sits.  I always add some more chicken broth to the leftovers.  We love the broth.
 
If you are watching your fat intake, I would recommend making this a day ahead and putting it into the fridge.  The grease from the chicken will go to the top and harden and can be removed.

Most importantly, the soup can break up congestion. The broth promotes mucus flow… gross, but it helps get it out of your lungs. (Which is even grosser if you think about it).

The herbs and vegetables help fight infection. The salt can help soothe a sore throat. So, pretty much every ingredient in the soup is working to make you feel better.

 You may still be sick, yes, but wouldn’t you prefer to feel decent if you have to suffer being sick in the first place?

One of the great things about homemade chicken noodle soup is you can take it so many different directions. It is like a canvas to a painter. You can create off of it endlessly.

I have a few other recipes that are variations on chicken soup, all special in their very own way.  What kind of a friend (or Mother) would I be if I didn’t share them ALL?

Using Homemade Egg Noodles In Chicken Noodle Soup

Now if you are going to go homemade and really do it authentically, then why not make your own egg noodles for your chicken noodle soup, right? Using homemade egg noodles really takes the soup to another whole level. 

Making homemade egg noodles is super easy and doesn’t take but a few minutes. Kneading the dough is fun and it isn’t like making bread and waiting for the dough to rise. Noodles come together in minutes and they cook so quickly, you will be surprised. 

Here is my recipe for Homemade Egg Noodles… well, actually it is borrowed from my Mom and Better Homes & Gardens, but it’s the one I grew up with.

Homemade Chicken Noodle Soup

Ingredients

  • 1 whole chicken
  • 1 medium-sized onion chopped
  • 5 stalks celery diced
  • 5 carrots sliced
  • 1- 32 oz chicken broth
  • 2 Tablespoons chicken bouillon optional
  • salt and pepper
  • water
  • Egg Noodles frozen or Homemade Egg Noodles

Instructions

  • Place chicken, whole, into your soup pot. Add veggies. I cut my onion up fairly large, and do the same for my celery and carrots. We love our veggies over here!
  • I put A LOT of celery in my soup, because I love it! If I had to guess, I would say use about 5-6 stalks. When I am in a rush I buy the carrot chips and just give them a quick chop. I use the whole bag. We have a big family though, and usually we eat it, I put some in the fridge and then have some for the freezer to pull out in a pinch.
  • Salt and pepper generously.
  • Add chicken broth, bouillon (if needed), salt and pepper generously, and fill with water to cover the ingredients, adding about 2-3 more inches above them. Cover and cook until chicken is done.
  • Depending on the size of your chicken, I find it’s done in about an hour or a little more.
  • Remove chicken and de-bone, remove skin and dice up meat.
  • Return to pot.
  •  While your soup is cooking, boil the egg noodles until they are done, and drain and rinse them.
  • Add the noodles to the soup, and serve. I like to top mine with parsley.

Notes

You may not need to add bouillion. Taste after it cooks to see if the chicken did the job.
